Don't get too wrapped around the axle on this. As long as the front mark is at the front, it doesn't make any difference which side goes up. Your primary consideration is to ensure that the water flows where it's supposed to without restrictions.
That "this side up" reference is what confuses the issue. On some gaskets, there could be a proper left and right side. This is so that the fire ring doesn't brinell aluminum heads duging the expansion and contraction process.
