Good choice on tranny and rearend gear. Be sure to budget for both of them from the start. A lot of projects such as yours seem to run out of money with the engine and never get a good drivetrain behind it. Without a good gear like a 3.50 all the money you spend on the engine will seem wasted when it comes to performance. In other words, with the stock gear (2.75 or 3.00) the car will actually be slower in the bottom RPM range because of the higher torque range brought on by a larger cam and better flowing intake manifold. The 3.50 gear will get the engine up in the useable torque range quicker. Your car needs horsepower, strong tranny and a good gear to be a true performer. Leave out one of those items and the result is a disappointing ride.
