Yes, "high-speed touring" can be brake-intensive...
I went with the wilwood '65-69 mustang bolt-on kit up front. 11.75" rotors and 4-piston calipers. Out back, i have the stainless steel brakes corp rear disc kit which seems to be a versailles setup. both kits are super easy bolt-ons. I use 16x8 vintage45 wheels as no big brake kits would fit my repop mag-stars. nb: while this setup has gone together easily, I have no idea how well it works as the car is not yet completed.
as for my valvetrain, the edelbrock performer rpm cam is .572" lift, 236deg at .050, 108deg lobe ctrs. Crane pushrods and the carroll shelby stainless rocker setup. the rocker setup is spaced to fit the shelby heads and machine work must be done in order to make it properly fit the edelbrock heads.
The engine shop said a modern 4 barrel should produce more power than my c7zx intake and bj, bk carbs so im testing the performer rpm intake with a race demon 750 carb. i'll post the results after the holidays
